Two quotes for the same product can hide very different quality. A good specification sheet answers the questions below, and a good supplier will share it before you ask.
Physical quality
- Moisture. Low moisture protects shelf life. Ask for the limit and the tested value per lot.
- Colour and flavour. Agree a reference sample, not just a description.
- Cut and size. Ask for the size range, and for how much fines are allowed.
- Foreign matter. Ask how it is removed, for example sortex sorting, and what the limit is.
Food safety
- Microbiology. Look for limits on total plate count, yeast and mould, and absence of pathogens such as Salmonella.
- Pesticide residue. Confirm the product meets the limits of your destination market.
- Allergen statement. Ask for it in writing.
Packing and paperwork
- Carton weight, inner liner type and pallet configuration.
- Shelf life and storage advice.
- A certificate of analysis with every lot.
- Any certificates your market requires, with valid dates.
Always ask for a sample
Test the sample against the spec in your own lab or recipe. If the numbers and the product agree, you can order with far more confidence.
